Legumes Salad


1 can mixed legumes (540 mL)

1 apple, cored and diced

½ cucumber or zucchini, diced

1 green onion or red onion, thinly sliced

½ cup of dried cranberries

¼ cup toasted walnuts

Cut the ingredients into very thin slices in a large bowl, then pour:

¼ cup olive oil
¼ cup Sweet Brown Vinegar

Toss, cover and refrigerate 1 hour before serving!
